Acid fermentation is an anaerobic process. That means no oxygen is used during the process and it takes place in the absence of the gas.
The lack of oxygen and the high acidity of the brine solution provides the perfect environment for the fermentation process to proceed. This is because such an environment deters the growth of mould-causing microorganisms.
But the air present inside the jar is not 100% depleted of oxygen. It’s just that the oxygen content in there is lower. As the veggies float on the water because of their relatively higher density, this leaves the section floating above the water vulnerable to the development of mould growth. Just small spoilage is enough to ruin the entire single batch.
That’s where fermentation weights come in. Once you’ve submerged your to-be-pickled food items in the brine solution, you need to place these weights before applying the airlock lid. This ensures that the food stays below the water level during the entire process.
Importance of Using Adequately Heavy Glass Weights in Fermentation
In Mason jar fermentation, using a heavy glass weight is necessary to ensure safe fermentation and prevent mold growth. Our glass weight is 200g and this weight helps keep the shredded cabbage submerged under the brine, creating an anaerobic environment essential for the growth of beneficial bacteria (lactic acid bacteria) and inhibiting mold and undesirable bacteria.
Without adequate glass weight, the cabbage can float above the brine, exposing it to oxygen and increasing the risk of mold contamination, which can spoil the sauerkraut. Thus, the glass weight plays a critical role in maintaining the conditions necessary for successful fermentation and ensuring a safe and tasty final product.

These weights were designed to be the very best on the market for fermenting in wide mouth Mason jars. They are 70mm (2.75 inches) in diameter and 35mm (1.37 inches) thick. They weigh 7 ounces each (200 grams).
These glass weights are cut from sheets of high quality tempered soda-lime glass, the same material Mason jars themselves are made of but they have been temperaed, which is more safe and less easily broken. If you fill your jars up to the neck, one glass weight will perfectly cover your ferment. You can use more than one glass weight if the jar isn’t completely full or if you want to displace more brine to bring the level up to the neck of the jar. With more active ferments, you might not want to fill the jar into the neck to avoid overflowing brine. Then you will probably want to use two glass weights.
